Hearty Instant Pot Chicken Congee
Instant pot chicken congee is easy on the tummy and makes a great meal for cold weather or when you don't feel so great. Fantastic for breakfast

Ingredients
- 3/4 cup White rice, rinsed (jasmine preferred)
- 1 lb Fresh or frozen Chicken thighs (boneless, skinless)
- 6 1/2 cups Water
- 1 Large carrot finely chopped
- 1 Large celery stalk finely chopped
- 1 Tbsp Ginger finely chopped or grated
- Green onions (garnish)
- Salt (to taste)
Instructions
- Add chicken thighs, rice, carrot, celery, water and ginger to Instant pot.
- Pressure cook on High for 30 minutes
- Allow to natural release for at least 20 minutes
- Once pressure is released, remove chicken thighs and shred with a fork
- Add shredded chicken thighs back in and salt to taste
- Serve with chopped green onions. Adding scrambled or fried egg can also add a nice, heart element
